A striking chardonnay that blows you away with its limey, briny character. This is all about chalk, lime, sea urchins, hot stone, oyster shells and green apples. Different texture here from their Talinay bottling. This is more chalky and mealy on the palate and gives you an ashy mouthfeel, as if biting on the chalk. Persistent and nervy finish. Sharp but textured. Made with native yeast, fermented in used Burgundy oak barrels (second, third and fourth use). No malolactic. This is very special. Drink now or hold.
