Almost all Vaillons with a little Sechet in the mix. Hmm – another very forward nose and what a fine purity – clarity – of aroma too – again super. Broader but growing with intensity – the shape is different but the esprit is the same. Another peak of finishing intensity – that’s a super excellent wine – so good!
Burghound
(about two-thirds from Vaillons proper with the remainder from Séchet). Pretty and wafting aromas include those of white pepper, spice, floral and moderate Chablis character. The sleek, intense and delicious medium-weight flavors possess a bit more volume in not quite the same finesse on the clean, dry and bitter lemon-inflected finale. This should be reasonably approachable young yet repay 4 to 7 years of keeping.
