The medium-sweet 2017 Zankyo Super 7 Junmai Daiginjo offers complex notes of melon, peach and fresh almond. It has a strong impact on the palate—broad, meaty and very well balanced. To achieve the 7% polishing ratio, the sake rice Kuranohana is used and it is a difficult process until fermentation. But it is not as pure as water.
